Bye Bye Pork Butt; New Names for Meat Cuts

(SIOUX CITY, IA) No butt's about it the pork and beef industries are looking to change the names of meat cuts like pork butt.

They're aiming to make it less confusing and more appetizing for you.

"What is a pork butt? Why do you sell Pork butts?"
 
Steve Hein, Manager of Braunger's Steak Company says that was his son's reaction when he read the label of what many people know as Pork Butt.
Funny thing is it doesn't even come from the back end of the pig.
 
"A lot of people are turned off when they hear that name. It's really a pork shoulder," says Hein.
 
Which is why many feel the name have to go.
 
The Beef and Pork industries hope to change 350 names of meat cuts in an effort to make it easier on the consumer when purchasing dinner.
 
"The Consumer has changed. The Consumer is really looking for simplified naming and unique identifiable cut names," says Travis Amen, Director of Market Intelligence for the Beef Checkoff Program.
 
Like the flat iron steak often referred to as the Beef shoulder top blade steak boneless flat iron.

That's a mouthful.
 
"Someone from the meat industry would know what top blade and under blade what all that means but for the consumer that doesn't mean anything to them. It's just confusing," says Hein.
 
"Consumers are really familiar with three or four meat cuts. So the goal of this is to really broaden the spectrum of cuts the consumer is comfortable with," says Amen.
 
Part of that means making sure everyone knows not all pork chops are created equal.
 
"Pork chops come off the pork loin which is similar to where the rib-eye, T-bones, New York strips, porter house come off the cow. So I can see why they want to call that to differentiate between them, but for most people its not going to be a big deal," says Hein.
 
The beef and pork industries say you should see these name changes come by this summer's grilling season.
